Fish Stew? Really? Yes!

I have two go-to soup recipes that I like to make, this Chicken Noodle Soup and this Cheddar Broccoli Soup. Variety is nice, though. So when I stumbled on this Fish Stew recipe, I thought: Fish stew? Really? I was doubtful.

But the ingredients intrigued me—things like white fish, tomatoes, onions, garlic, and parsley…

Honestly, anything with onions, garlic, and parsley will make me stop in my tracks. I mean, come on…

When I was at the grocery store, I told the check-out clerk that I was making fish stew for the first time. She made a yuck face. “Fish stew? What’s in it?” When I told her the ingredients, her yuck-face frown did not turn upside-down.

That didn’t raise my confidence. But I had $12 worth of fresh cod in my cart and a hungry belly. There was no turning back!

Once I got home, started pulling the ingredients together, and got cooking…

…the kitchen-smells were fantastic. Hubby passed through the kitchen several times, sniffing in delight.

The fish stew was a light, delicious, and savory success. All it needed was an extra smidge of salt, a tiny bit of pepper, and a chunk of bread on the side. A perfect lunch for a chilly day.
